Each month, Demeters Steakhouse presents a new four-course menu featuring a variety of local vendors, New England spirits and sustainable ingredients. It’s called Dining in Action, and it’s our way of celebrating the Seacoast’s unique food culture. Here’s a look at Dining in Action for September 2016.

This Month’s Vendors
This September, we’re featuring pork from our friends at Short Creek Farm in Northwood, NH. Founded by friends Jeff Backer and Dave Viola, Short Creek Farm believes in food that fosters “a sense of place,” raising pastured pork, grass fed beef and heirloom vegetables using ecologically conscientious methods. Short Creek sausages and products are made in house using mostly ingredients that are grown on the farm.
Wines and awards at Grape Time Winery
Our wine pairings come from Grape Time Winery, produced at the IncrediBREW facility in Nashua, NH. Grape Time wines are made from a variety of international ingredients, fermented and aged on premise by the IncrediBREW staff. IncrediBREW also offers customized beer, wine and sodas for both individuals and restaurants.
This Month’s Menu
Our Dining in Action menu starts off with pork belly rillettes served with grilled local peaches, ciabatta bread and whole grain mustards, paired with a sparkling cranberry pinot grigio cocktail. This is followed by a braised pig head ravioli lathered with fresh cherry tomatoes, basil oil and braising jus, accompanied by a refreshing sauvignon blanc.
For the entrée, we’re offering an enticing bone-in center cut pork chop (seen up top) served with bacon cheddar mashed fingerlings, garlic braised kale and dijon cream, paired with a house made Tuscan sangria. The meal finishes with a seasonal berry crumble pound cake, garnished with whipped chocolate mousse and paired with a chocolate raspberry port.
